Chocolate Cake Brownies

My daughter called from Vegas sometime back looking for a cake recipe that used no sugar. Her daughter, Carly was having a birthday and had just found out that she was diabetic, so she need a cake mix that had no sugar.

I put out a request for such an animal and my friend Donna D. brought me a book containing this recipe, so I am passing this on to those people that find themselves in just such a need for extra help.

The lady that wrote this article said her son was allergic to just about everything, such as eggs, dairy and wheat flour.

Desperate to make a cake for her son’s first birthday she came up with this. They will be gluten free, egg free and dairy free. Chill and tip with fresh strawberries and walnuts.

• Canola oil spray

• 3/4 cup organic canola oil

• 3/4 cup honey

• 1/4 cup organic rice milk

• 1/4 cup flaxseed meal

• 2 teaspoons vanilla

• 1 1/2 cups organic brown rice flour

• 1/2 cup organic amaranth flour

• 1 cup organic cocoa powder

• 1 teaspoon baking soda

• 3/4 teaspoon sea salt

• 2 teaspoons baking powder

• 1 cup organic walnuts, finely minced

• 1/2 cup chocolate baking chips

Preheat oven to 350 degrees. Grease pan 9x13 with Canola oil. Combine oil, honey rice milk, flaxseed and vanilla in order, thin mix one minute on medium-high speed. Gradually add brown rice flour, amaranth flour and cocoa powder in order, mix one minute on medium high speed, scraping bowl occasionally. Add baking soda, sea salt and baking powder in order, then mix one minute on high speed. Stir in walnuts and baking chips, mix well. Do not over mix. Pour into pan. Bake 17-20 minutes. Set pan on cooling rack for one hour. Serve chilled with ground walnuts and fresh strawberries on top. Store in refrigerator. Makes about 12 brownies.

I am sure that this recipe will be of good use to a lot of mothers who have children that are highly allergic to several things. All children want a birthday cake and this little boy is a very lucky one to have such a caring mother and dad.
