Apricot Jell-O Salad

This weather keeps me so confused. I don’t know if I am to give you a recipe for something hot or something cold. Oh well, you can’t go wrong with Jell-O.

2 packages of Apricot Jell-O

2 cups of boiling water

1 1/2 cups of cold water

1 large can of crushed pineapple (save the juice)

2 sliced bananas

1 cup of miniature marshmallows

Dissolve jell-o in boiling water, add cold water and set aside to slightly thicken. Add bananas, marshmallows and drained pineapple. Let set until firm.

Topping:

1/2 cup of sugar

1/2 tbsp of flour

3 oz of cream cheese

1 egg, beaten

1/2 cup of pineapple juice

10 oz of cool whip

Mix sugar, flour and egg. Add pineapple juice, cook until thicken. Add softened cream cheese. Cool and then fold in cool whip. Spread over jell-o.
